Pork scratchings are back on the British menu at Selfridges

On Monday 7th November, Selfridges Food Hall will be introducing a revolutionary new British snack – Mr Trotter’s Great British Pork Crackling.

Food writers Tom Parker Bowles and Matthew Fort along with Cotswold farmer, Rupert Ponsonby have created a new interpretation of the pork scratching made from 100% British pigs, which will be sold exclusively in the Selfridges Food Hall.

Tom Parker Bowles comments: “We’ve long been pork scratchings fanatics, seeing them as a titan among snacks. However, nearly every pork scratching sold in Britain is made with Danish rind. As supporters of British farmers we saw it as an opportunity to re-create the great British snack using truly British ingredients”

Graham Jebb and his team at RayGray snacks in the West Midlands are true masters of their art. Graham developed a slow cooking process which vastly increases the signature ‘crunch’ of the pork crackling snack.

Tom continues “We cook our pork scratchings by hand using the new slow cooking process, have removed the Monosodium Glutamate, using sea salt and special seasoning instead. The result is a revolutionary crackling with both crunch and punch.”

Tom and Matthew will be in Selfridges stores offering consumer tastings on the following dates: 10th November in London, 12-3pm, 5-7pm, 12th November in Birmingham 12-3pm; and 19th November in Manchester 12-3pm.

Available exclusively at Selfridges stores (London, Birmingham and Manchester) from 10th November 2011 at 1.89 per pack.
